I have experience with sensor data acquisition (see resume), and Python knowledge. I myself have a raspberry-pi, which I have used for a robotics project, and for deploying my own personal servers. I would write the program in two parts: the daemon/server and the client (graphical interface). The daemon would read serial data from the Bluetooth and write it into a database according to your configuration (i.e: writing location and delay). The client would be opened when needed, and would be according to your needs: would display the data, would create a graph. You would be able to shift the graph and zoom-in and -out. Also, the GUI will have button for starting/stopping the daemon, so no command-line knowledge is required for the user. This structure would allow the data to be written without the need of a display running.

I have experience integrating a variety of sensors and actuators with a variety of raspberry pi flavors. I have built Linux distros for raspberry pi, and have even used it to track faces and laser dots in a camera feed. This is what I do, and we can do it for this price or $50 an hour.
