Update existing website to add personalization tags to outbound emails

I run an email based website, similar to constant contact or mail chimp. The site is based on software provided by awebdesk, if you are familiar with that. I need to add some tags to the email creation process to allow some additional personalization. The software already allows for most things such as the common ones, i.e., first name, last name, email, etc, as well as allows the custom creation of virtually any tag. The problem I'm having is when a list is created, a persons name and address are entered into the list as the list sender. This is available in the email as a total tag of %sender-info%, but I need this broken into the various parts, basically %sender-name%, %sender-address%, %sender-phone% and a few others. Also, in the list creation, on the sender info, I need to have phone, logo, image added. I would also like to have 4 custom fields added. ----- On the message creation page, you enter the from name and from email. When the page gets submitted, it updates the db correctly. If you come back to that page to make an update, the from name and from email are blank and have to be re-entered. I need this corrected so it re-inserts what was originally entered. ---- The system has the ability to track opens, clicks, etc. It does this by wrapping the links in a forward url and placing a tracking image in the email. It then makes the link / image come from my website, which is causing some problems for me. I need to be able to change the domain of where the tracking info comes from.
