I'm an Elec. Eng with years of experience in automation and control. A platform like Arduino is not inherently deterministic like a PLC (the scan time of a PLC), and advanced programming techniques may be required which are not native to the Arduino environment, eg, the blocking nature of the analog read function which may easily become problematic with so many sensors. This may require use of native functionality of the microcontoller and I have experience designing embedded systems pre-arduino using the Atmel atmega and ARM devices and also incorporating the low level functionality into Arduino code to retain the simplicity of Arduino.
