Convert scanned PDF documents into fillable forms

I have 11 documents which have been scanned into PDF format. I would like all relevant fields on these documents to have fillable text fields with data validation where necessary (date, time, checkboxes, radio buttons etc).I simply need these forms to be fillable to end users who are working with Samsung Galaxy Tab tablets. They will be using Adobe Reader to view/complete the documents on these devices. I need to make sure that all fields are fillable, and that date/time fields can be chosen on the devices. Signature fields (where applicable) will be signed by customers, so the signatures will differ from job to job. If it is easier, the signature fields can just be text boxes and the end user can free write their signature. I'm open to your recommendations on this. The end result being that users can fill out the PDF forms on a tablet device and save them for review. I hope this is really easy work who expert in Adobe Acrobat. it won't take convert just 11 files more than one hour! I am happy to pay two hours fee also but it must be done 1-2 hours! per hour - 8-10$ Attached all PDFs
