Replace WordPress theme on two sites

I want to replace the custom theme on two sites with a standard one. The sites are [login to view URL] and histalkpractice.com. The theme is here:

I will not use the image slider at the top, so that can be turned off.
Steps that need to be done:
1. Install a fresh WordPress copy on your server and add the plug-ins I'm using so that we can test without affecting the live site (or copy my site over if that's easier).
2. Install the new theme.
3. Set up the new logo, menu options, widgets, etc.
4. Make any changes that are necessary if we run into any compatibility problems.
5. Once we determine that everything is working, install the changes on the live site.
6. Repeat Steps 2-5 for the second site. The themes for the two sites are basically identical, so any issues will come up on the first one. I just had a third very similar site upgraded to a different template and there really were no issues - the existing theme is simple.
I think this will be straightforward, but since it's a new design I'm sure we'll run into a few cosmetic changes to be made and I may have some additional requests once I see how it looks. If anything unexpected requires significant work, I'll either pay extra or bid those changes out separately. I need high quality work that avoids problems on the live sites.
