Assistance formatting documents in Mac for Word

I have 6-8 different documents that I have had for a while. I realize they are not as good as they could be. These are client agreements where I want some sections of the agr. to be easily editable, and other sections not (frozen in place). I also want someone to improve my letterhead. I have watched tutorials and officially give up. I need about 2-3 hours help, to start with.
