So first of all i will integerate ESP-12 with DHt22 which is easy on one wire protocol. I have done many times. And then i will upload the data on Thingspeak via MQTT or Rest API's (which ever you like).Then we also implement the functionality of IFTTT for emailing and messaging. Hello, ePaper uses lot of pins on the ESP8266, i would recommend the use of ESP32 instead, has same features as in the ESP8266 model , but with powerful processor and yes we can connect DHT22 to it and display values over to the ePaper or you will be able to monitor values in real time right from the android app that i will design and you will also be able to control your smart plug directly from web page hit me on chat for more discussion please, seems like your budget is really low for all those
