There are several of them: virtualbox, vmware, openvz, xen, kvm, quemu. And some others. If your host server will work only as host machine for 2 virtual servers, so i'd like to offer you VMWare iESXI. It is free OS, very fast and very simple to administrate it. Assuming the base machine is a dedicated server, I can install and configure OpenVZ, a highly-trusted virtualization platform with shared kernelspace. If you would prefer the XEN hypervisor (separate kernels), I have experience with that as well. I used to run a business hosting VPSes, and can easily set up virtualization software on dedicated hardware for you.
