My aim is to manufacture various cheeses substitutes, (mazzarella and other cheeses suitable for pizza) in a country without a dairy industry. I want to be able to manufacture those substitutes from locally available ingredients.
the ingredients available are:
powdered milk non skimmed (UHT pasteurized)
powdered milk skimmed
Non dairy milk substitutes,
Various oils and fats (cocoa nut oil, palm oil cocoa butter and more)
The aim is to manufacture those cheese substitutes manually in small quantities (around 100 Kg/month).
