I believe I could help with the PCB design and manufacture but not the case or the software. I have recently designed several Blue tooth products using Nordic and TI devices NRF 8001, NR51822, CC2541, CC2564 and the Laird BL600 and MDBT40 hybrids. The devices contain a mixture of Flash, orientation / motion device, RTC, LED's and buzzers.
